Pancakes – Bánh xèo kiểu Mỹ

I used to buy ready-made pancakes, but this year I always make pancakes myself. These classic pancakes are among the most typical American breakfast items; and the good thing is pancakes are ‘easy-to-make’ cakes which don’t deprive you of your time. Just within 20 – 25 minutes you will have your own home-made pancakes ready :)

Vietnam also has pancakes (bánh xèo, bánh khoái) which are made from rice flour.
I will definitely make some bánh xèo this summer when I come home ;) )

The recipe which is from "The America’s test kitchen" yields 16 pancakes (but I usually make only 4 – 8 each time, so I simply reduce all the ingredients by half or three-fourths):

* Ingredients:
– 2 cups all-purpose flour
– 2 Tbsps sugar
– 2 tsps baking powder
– 1/2 tsp baking soda
– 1/2 tsp salt
– 2 cups buttermilk (if you don’t have buttermilk, substitute the ingredient with milk + lemon juice or white vinegar, 1 cup buttermilk = 1 cup milk + 1 Tbsp lemon juice, let stand to thicken)
– 3 Tbsps unsalted butter, melted
– 1 large egg
– vegetable oil for the pan
